For this Chicago-based, upscale River North restaurant, Dolan provided a series of five wall art installations, as well as a site-specific reclaimed wood bar installation. Dragon Ranch Moonshine & BBQ was a fusion restaurant and bar combining flavors of the American South with Pan-Asian touches. For the largest showpiece artwork, Dolan created a grand paper collage depicting a winged, fire-breathing dragon defending a jug of moonshine. The other four artworks depicted staple animals of the American diet (a pig, cow, duck and chickens) in the style of old feed store signs with scenes meant to tell the story of Southern moonshining.
